What's For Dinner Tonight?

Pork Chops with Balsamic Vinegar
Ingredients
*4 pork chops
*1 ½ teaspoon of lemon pepper
*1 teaspoon vegetable oil
*3 tablespoons balsamic vinegar
*2 tablespoons chicken broth
*2 teaspoons butter

Preparation

Pat the chops dry. Coat with lemon pepper. Heat oil in heavy skillet over medium-high heat. Add chops. Brown on first side for 8 minutes; turn and cook 7 minutes more until done. Remove from pan and keep warm.

Add vinegar and broth to skillet; cook, stirring, until syrupy (about 1 -2 minutes). Stir in butter until blended. Spoon sauce over the chops.

What's For Dinner Tonight?

Real Philly Cheese Steak

Ingredients

* 1 pound Rib Eye frozen, then cut very thin
* 1 Onion
* 1 Green and Red Pepper, cut into strips
* Provolone Cheese / American Cheese or Cheese Whiz
* 4 Hoagie Rolls


Preparation

**Meat**

Use a Rib Eye, and then slice it very thin. You want it sliced thin. You can buy the hunk of rib eye and freeze and slice it yourself, but I would just get it already sliced from the meat department at your local super market.

**Bread**

You want to use good old Philadelphia AMOROSOS rolls.

**Toppings**

All of this is personal choice. Cheeses used vary - On most REAL Philly cheese steaks cheese whiz is used, but I'm not much of a fan. My hubby loves provolone on his and would totally recommend using that. I just use American cheese on mine.

Cooking the steak: In a cast iron frying pan, or a grill pan heat some oil. Saute toppings until pliable - make them however you like them. Remove them from pan and set aside. Pour some more oil in the pan on medium high heat. Place 1/4 to 1/3 of a pound of meat in the pan, lying the pieces flat and overlapping to form a shape that will fit nicely in a bun. When the meat turns gray with doneness, flip it over and begin to shred the steak in the pan. You want bite-sized pieces that are easy to eat. If you are using cheese slices now is the time to lie them on top of the meat. Add the other toppings back into the pan next to the meat and allow to reheat. Cover the pan to allow the cheese to melt. This should take 1-2 minutes. If the meat looks overcooked, that's OK - it should be GRAY.

This is the time to toast the bread if you so wish. I don't like mine toasted at all. Warmed is OK.

What's For Dinner Tonight?

Country Baked Potato Soup

Ingredients

* 4 large Russett Baking Potato's
* 2/3 cup Butter
* 1/2 cup All-Purpose Flour
* 2 teaspoons Salt
* 1 tablespoon White Pepper
* 8 cups Milk
* 1 cup Sour Cream
* 1/4 cup thinly sliced green onions
* 1/2 pound Bacon cooked and crumbled
* 1 cup shredded cheese for topping


Preparation

Bake potato's at 350 degrees for 65-75 minutes or until tender; cool completely. Peel and cube potato's into 1" cubes. You want it to be chunky, but some will break up. In a large Dutch Oven, melt butter; stir in flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. If you want it thicker, mash a few potato's against the side of the pot and stir, and it will thicken right up. Remove from heat; whisk in sour cream. Add potato's and green onions. Place back on stove and heat to serving temperature over medium heat, stirring occasionally. Ladle into bowl and garnish with bacon and cheese, and get ready to say WOW!.

This meal was made by my hubby tonight! I'm so lucky! :)

What's For Dinner Tonight?

Pork Chops (tender, Oven-baked)
I'm always looking for new and easy meals to make for me and my family for dinner. Since I've been home more, I've gotten bored of the same old, so my goal is to start finding cool new recipes. Here is one I made tonight. Honestly... they are super GOOD! So if you want to make a simple dinner this would be the perfect dish for you!

Here's how...

Ingredients
* 4 to 5 loin pork chops
* 2 lg. onions sliced
* 2 eggs, beaten
* 1 c. flour
* Salt and pepper to taste
* 2 chicken bouillon cubes
* 1/2 cup boiling water


Preparation
Dip chops in beaten egg and then in salted, peppered flour (cover well); add oil to frying pan and brown chops lightly. Place chops in glass 10 x 13 inch shallow pan. Slice onion over chops.

Add more salt and pepper. Dissolve 2 chicken bouillon cubes in 1/2 cup boiling water and add this to drippings in frying pan. Pour this over chops. Cover entire dish with foil. Bake at 375 degrees for 45 minutes.
